Squash and pumpkin are loaded in the antioxidants beta-carotene and alpha-carotene. So, what can eating them do for you?
An ten year analysis of the diets of 37,846 healthy people found that alpha-carotene reduced the risk of type 2 diabetes by a significant 15%. Beta-carotene was even more powerful: it reduced the risk by a whopping 22%.
This study emphasizes again the importance of diet for diabetes. You may also want to feast on raspberries and eat more whole grains.
