What Did You Do With Your Dandelions?

Here’s what Linda (deliciously) did with ours!

First, she went out and, instead of weeding the garden, she harvested the weeds. Of course, we have no pesticides or insecticides on our organic garden or lawn. Then she brought all the beautiful dandelion greens into the kitchen.

One of the things we have learned from our travels is that every country that is still in touch with a living traditional culture eats some version of field greens: bitter greens that are good for your liver and for digestion. In Greece, they call them hortos, which is just the word for vegetable. We enjoyed these delicious bitter greens at the beginning of meals with people who invited us into their homes to share a meal. In North America, with our obsession with sweet and salty, we have forgotten the health benefits of bitter.

Well, here’s Linda’s simple solution to the neglect of bitter with compliments from your back yard.

Dandelion Greens with Walnuts, Fava Beans and Strawberries.

A spring delight

3 garlic cloves peeled and minced
Sauté in 1 tbs of olive oil
Add 1 tbs balsamic vinegar
Pepper and a pinch of red pepper flakes
Add 19 oz cooked favs beans: you can use canned, drained and rinsed
Sauté for 4 minutes.
Add 2 c chopped fresh young dandelions greens
Sauté 3 to 4 minutes. Lid on.
Add 1/3 c walnut pieces. Heat through
Add 4 to 5 large freshly sliced strawberries, on top, as you serve it, after it has cooled down.
Serve cool
