Preveting a leading cause of blindness later in life could be as simple as eating more of this (and this) . . .

This study followed 2,037 people who were 49 or older for 15 years to see what the effect of getting nitrate from your food had on your risk of developing age-related macular degeneration.

The impressive finding of the study was that people who ate 100-142mg of nitrates from vegetable sources had a significant 35% reduction of risk of early age-related macular degeneration than people who ate less than 69mg. At higher amounts, there was still a 31% reduction in risk, but the benefit was no longer significant. There was no significant benefit when the source of nitrates was non-vegetable.

Good sources of nitrates include leafy green vegetables and beet roots.

Macular degeneration is one of the leading causes of blindness in people over fifty-five. It is the leading cause of severe, irreversible vision loss in older Americans. The macula is the area of the retina responsible for fine vision. When it degenerates, central vision and fine details degenerate with it.

This study offers the hope that eating lots of leafy green vegetables and other nitrate rich vegetables like beets can help you to prevent macular degeneration.
